Colour-coded handles for HACCP

Several knives in the series come with a coloured handle. That is not a design detail but a working method: professional kitchens use one colour per food group to avoid cross-contamination. The practice is part of HACCP, and it works just as well at home – particularly if someone in the household has an allergy.

• Red – raw meat
• Blue – fish and shellfish
• Yellow – poultry
• Green – fruit and vegetables
• White – dairy and bread
• Black – general use
