The parmesan knife is used to split aged hard cheeses – parmesan, grana padano, pecorino and similar. The technique is to push the tip of the blade into the cheese along its grain and then break it apart, rather than slicing. This gives the characteristic rough surfaces that preserve the texture and aroma of the cheese better than a sliced cut.
